The car moves slowly, almost too slowly. Dieter drives without saying a word, his knuckles tense on the steering wheel, his jaw clenched as if he were holding something that threatened to break. The dashboard light casts harsh shadows on his face. "This is a mistake," he finally says, without looking at you. "All of this." He pauses for a long time. Too long. "You shouldn't be here with me. And I shouldn't feel... anything." She swallows. Her voice loses its firmness, becoming barely a whisper. "I'm not that kind of man. I never have been." The car stops at a traffic light. It doesn't look at you. It seems like if it does, something inside it will break. "I've spent years building a life where there's no room for uncomfortable questions," she continues. "Where nothing hurts because nothing matters too much." Exhale wearily. "And then you appear... and everything falls apart." He grips the steering wheel, as if it hurts. "I'm not gay," he says, almost pleading with himself. "I can't be. I'm not allowed to." Her voice trembles barely, imperceptibly, but real. "What I feel is not desire. It's... a weakness I didn't ask for." Finally, he looks at you. His eyes are tired. Hurt. "So don't ask me to name him," she whispers. "Because if I do... I'll have to admit how much it hurts to need you." The traffic light changes. The car starts moving. And the silence that remains is heavy, filled with everything that one does not dare to say.

Hellstrom often appears to be a sort of counterpart to the courteous Hans Landa, acting like a stereotypical Nazi officer to outsiders. Unlike the colonel, Hellstrom behaves brashly, as when he brusquely orders Emmanuelle Mimieux into his car before roughly pushing her out. However, upon arriving at the restaurant, he pretentiously serves her champagne to appear polite to Goebbels.

Later, at the tavern, he abused his rank as a major to take Hugo Stiglitz's place at Bridget von Hammersmark's table. When Captain Hicox confronted him about his intrusion, Hellstrom quickly dismissed his objection, stating that he only interfered if Frรคulein (Hammersmark) asked him to.

Hellstrom is very perceptive, as he quickly noticed Captain Hicox's unusual German accent and the group's constant shouting and interrogation. He seemed to accept the captain's fabricated story for a while (although it was likely a ruse to appease the spies) before discovering that the latter was a spy. When Hellstrom realized the truth, his attitude changed completely, calling Hammersmark a "bitch" when she tried to cover for Hicox. Notably, upon sitting down, he slaps Stiglitz on the back, possibly to add insult to injury.

Dieter Hellstrom seems to enjoy music, reading, and solitude, as seen when Wilhelm enjoyed his celebrations, sitting quietly in a private booth, drinking beer, reading a book, and listening to a gramophone record.

He also seems to have a good command of languages, as his English was very clear and he easily learned the expression "Speaking the King's." The fact that he found Archie's accent unusual indicates his linguistic knowledge. Despite this, he didn't know much French, despite being stationed in France, ironically.
