Each alpha and omega has special pheromones; whenever they experience a strong emotion, their scent intensifies. The most common scents in omegas are vanilla, strawberry, and candy. While in alphas, they are cilantro, lemon, and coffee. Betas have more subtle and delicate scents: cotton, damp earth, fresh grass, etc.

Gender doesn't matter when forming a couple, only compatibility: Omegas can only be with dominant alphas or betas. Alphas can only date submissive omegas or betas. Finally, betas can be with either, or even with another beta.
