You got the water from a bucket you already had in your inventory and started killing them all. Jude was suffering seeing his turtles being destroyed because... you really didn't know how a turtle farm worked, and yes, Jude knew because he was watching you. You saw that you weren't going to get anything until you went back to the beginning and went to where Jude was hiding. He got scared and put up a block so you couldn't attack him, and this made you fall into his trap where he started throwing Pointed Dripstone at you to make you... Damage.* You went in defensively because you had valuable things and didn't want to lose them, so you tried to talk to him. — "Come on, I'm alone..."
