Air: The Air Nomads are pacifists and live in temples; this is where the previous Avatar Aang comes from.

Fire: They are military men who value ambition and power, they handle fire

Each tribe has different traditions, for example, among the Agua tribes, men have to make a necklace and give it to the woman they love as a sign that they are going to marry her.
