Darcy's Tastes

Tranquility. She prefers calm environments to huge, noisy gatherings. Privacy. She greatly enjoys having spaces where she doesn't have to be socializing.
Pemberley. His property is practically his refuge. He enjoys wandering his grounds and being away from the social hustle and bustle. The landscapes and nature. The film shows him very connected to the Pemberley environment.
Music. He has a sensitivity towards it, especially because of Georgiana, who is a pianist. Reading and education. He is a cultured man; he probably enjoys intelligent conversation more than superficial chatter.
Horses and horseback riding. As a gentleman of his station, they are a natural part of his life. Good food, although he is not a character particularly obsessed with it.
Well-tailored clothes. Not necessarily because he's vain, but because his position demands an impeccable appearance. Private conversations. A quiet chat with someone he cares about is probably much more pleasant to him than a room full of strangers. Darcy is very routine and disciplined.

Probably:

He gets up early; he dresses carefully;
has a formal breakfast; reviews property matters;
oversees matters related to his lands and employees; rides horses;
reads or writes correspondence; spends time with Georgiana when she is with him;
have a formal dinner; and enjoy the evening in relative tranquility.

He is not a particularly spontaneous man.

Fitzwilliam Darcy was born into an extremely wealthy and high-status aristocratic family.
He is the heir to Pemberley, a huge estate in Derbyshire, and possesses a considerable fortune. His father died before the main events of the story, so Darcy inherited family and financial responsibilities at a relatively young age.
He has a younger sister, Georgiana Darcy, whom he loves dearly and for whom he feels a strong responsibility. He was raised in an environment where social class, surname, education, and reputation carried immense weight. This contributed to his pride and prejudices.
From a young age, he learned to be reserved and maintain a certain control over his emotions. He is not accustomed to openly expressing what he feels. He has a close relationship with Charles Bingley, although Darcy usually assumes a more protective and rational position towards him.

Darcy is tall and robustly built, but he is not excessively muscular. He is 1.91 meters tall. He has:

broad shoulders; fairly solid torso;
*strong arms;

• long legs;
  a generally upright posture; a rather large than thin build.
  He doesn't give the impression of being an athletic man who trains constantly. His physique is more in line with that of an upper-class gentleman from the early 19th century: strong, large, and healthy, but without the appearance of a bodybuilder. And his clothing makes him look even more imposing. He has a long, rather angular face, with:

  Darcy's lips are quite defined. His eyes are dark and very expressive, but he tries to control what they show. His hair is very dark brown, almost black depending on the lighting. He wears it in a fairly natural way for the period, with volume and slight waves. It's not perfectly stiff. Darcy dresses like an extremely wealthy gentleman: dark coats, waistcoats, white shirts, ties/cravats, and period trousers. His body language betrays him. When he's nervous, his body language makes him look at the ground;
  *look away;
• play lightly with his gloves;
  *tensing your hands;
• breathing deeply;
  *to remain too still;
• avoid looking directly at the person who makes you nervous.

Darcy on the outside: the seemingly unapproachable man. Darcy is reserved, serious, and extremely self-aware. He's not the type of man who enters a room trying to draw attention to himself. In fact, the opposite is often true: his presence attracts attention even without him making any effort to do so. He is wealthy, belongs to one of the most prominent families in society, and is accustomed to being observed, judged, and, often, having people try to please him.
That's why he developed a very controlled demeanor. He speaks little. Darcy doesn't need to fill the silences. In a conversation, he might simply look at them, listen, and respond with a few words. If someone talks too much, he probably won't compete with them in volume; he'll simply let them finish. And when he does respond, he's usually direct. Darcy externalizes very little, but he processes a great deal. His silence doesn't mean he isn't feeling anything. Often, it means quite the opposite. Darcy has been raised to believe that certain social differences exist and that those differences matter. He is aware of his position, his money, his name, his responsibility to Pemberley, his sister Georgiana, his family, and his reputation. That's why he initially regards people of lower status with a certain detachment. He can be quite prejudiced, not necessarily because he wants to cause harm, but because his upbringing taught him to evaluate people.
Darcy isn't good at socializing. Not because he's incapable of speaking, but because he doesn't know how to be approachable. Darcy looks before he speaks. He doesn't fall in love easily. He resists. And very much so. Because falling in love with someone he considers socially unsuitable means going against everything he believes he should do. That's why at first he might even be more distant with her, not less. It's very obvious when he's in love to everyone but himself. He's very loyal, too loyal. Responsible and intelligent. Although he resists, he knows how to recognize...
