In Cheers, after returning to his original body, he has a telepathic conversation with GOLB-Betty, understanding that even though they love each other, he must let her go. He gets rid of the crown but still wants to save Fionna and Cake from the Beetle's destruction. GOLB-Betty makes him expel Fionna and Cake's world in the form of a flower, and he gives it to Fionna through his head, who wishes for her world to remain one without magic after accepting him as it is. Fionna and Cake's universe manages to be canonized in the Multiverse and he says goodbye to Fionna through her phone (which she had forgotten). He decides to be swallowed by GOLB-Betty, but she returns him to Ooo before taking a new form. After his adventure, he begins therapy with Minerva Campbell and tells her that he plans to move.

He tells his adventure to Astrid and presumably inspired her to create Casper and Nova.

In The Star, they later arrive in a world where vampires have taken over and Marceline is an evil vampire. Simon is horrified by how his adopted daughter ended up in that universe, but Fionna comforts him by telling him that Marcy probably didn't have him in that world, resulting in an evil Marceline. They eventually escape without taking the crown from the Vampire King of that world, whom Simon calls a bad father.

In Jerry, they arrive at a world where life was extinct and the only one "alive" was BMO, who decides to help them. During their journey, Simon tells Fionna the story of how he met Betty, after which she asks him why he never accompanied her on her trip and Betty did, which leaves him strange. Later they find the old tapes of the Ice King of that world, so Fionna begins to regret the idea of Simon becoming the Ice King again. After obtaining the crown of that world, Simon performs a ritual so that Fionna and Cake return to his head and he tries to put the crown back on his head, but is interrupted by GOLB-Betty.

In Casper and Nova, Simon arrives in GOLB-Betty's dimension and, as he tries to put on the crown, is again interrupted by GOLB-Betty, who sends him into Shermy's body. He tries to find out where he can find the crown and finds a futuristic video game-like book. What he sees are two characters named Casper and Nova, who loved each other deeply but had very different goals.

In Cake the Cat, he also brings Fionna along, being thwarted in the process. In Prismo, the Wish Master, he joins Fionna and Cake in fleeing the Beetle. It is revealed that Prismo was the creator of Fionna and Cake's universe, and that he hid that universe in the Ice King's mind, but lost his magic when he reverted to Simon. He decides that to save Fionna and Cake, he must become the Ice King again, so they go on a quest to find a magical crown across the multiverse.

In Destiny, the three attempt to find the crown, but it has been destroyed. They manage to escape the Scarab in time, but it follows them.

In The Winter King, she meets the Winter King, a sane version of the Ice King, in another alternate universe. He tells her he overcame his insanity through sheer willpower. He creates a new crown for Simon, but Queen Bubblegum (a crazed alternate version of Princess Bubblegum) kidnaps them. Simon insists on saving her, but the Winter King says she's beyond saving. Fionna manages to save them and receives a loving kiss from the Winter King, but he ends up dying after the kiss. They eventually escape to another dimension and fist bump, united in their adventure.

In the series finale Come With Me!, Betty, King Man, and Maja summoned GOLB to Ooo. Betty had bonded with Maja in order to harness GOLB's power. King Man told Ice King that he is the only one who can stop her. Ice King compared King Man's instructions to reason with her to fan fiction and began singing Oh, Fionna to her, causing her to wake up and madly scold him for opposing her when she almost "succeeded" in using GOLB's power to heal him. Her powerful emotions connected to Maja cause the latter to explode, throwing Ice King and Betty into GOLB's mouth with Finn jumping in behind them.

While inside GOLB's "stomach" (along with Finn), Betty and Simon were digested and returned to their healthy, non-magical forms (human forms), with the two completely reunited, with Simon now remembering Betty. Reunited once more, Simon and Betty embrace as the space they are trapped in begins to shrink.

Later, Finn and Jake's friends sing the song "Always Then We Can Return", allowing Simon and Finn to escape from inside GOLB, though Betty chooses to stay behind as a sacrifice and uses the Ice Crown (which was restored to its essential form, granting its wearer their deepest and truest wish) to wish for GOLB to disappear. When this doesn't work, she wishes for Simon to be protected at all costs. As a result, Betty merges with GOLB and the two become one entity. Devastated by Betty's decision, Simon mourns for her as the new GOLB leaves the planet through another portal, and is comforted by Marceline. Before the portal closes, the Ice Crown falls to the ground. Gunter decides to wear it, merges with it, and transforms into Ice Thing after wishing to be Ice King.

Simon is later seen in Prismo's Time Room, seemingly wishing for Betty to return, only to have a similar outcome to when the King Man wished to bring Margles back.

Simon is seen at Marceline's house, making popcorn and spending time with Marceline, Princess Bubblegum, Peppermint, Ice Thing, and Princess Turtle. He is shown to be smiling, implying that he has moved on and accepted Betty's sacrifice.

Simon appears again in Obsidian, set an unspecified amount of time after Come With Me!. He is seen in the Dirty Brew Tavern singing Remembering You and later takes Crystal Boy to Marceline's house. He is later seen dressed in the Ice King's old robes, with Gunter's slippers and a toy crown playing in Marceline's freezer, stating that it is his way of coping with the trauma of years of being the Ice King after the Crystallines broke in. After the battle with Grub he arrives wanting to help along with some of the Banana Guards, Finn and Bronwyn. He is later shown to be dancing with a crystal person after the Crystal Kingdom is saved.

In Simon Petrikov, he is shown living in the Human City of Ooo, where he is busy converting his home into a 20th-century museum. Simon seems to have entered a dark phase and is much worse mentally and misses Betty, and he also feels like a "dinosaur" living in a world he is not used to.

Over time, Simon began to lose his mind as he started wearing the crown, deteriorating both mentally and physically over the years to his current state. His condition worsened after his fiancée Betty was taken to her future, which played a role in his subconscious need for princesses. As his mind and body were further twisted by the crown, Simon believed he was "too far gone" to find an escape from its influence, though he hoped that one day he could regain enough sanity for Betty, his "princess," to return and love him again. He is no longer considered human; the crown's power twisted not only his mind but also his body. His species/race was Wizard according to the writers.

Simon soon dissociated himself from his original identity to the point that his only reaction to seeing a video of his past was embarrassment at the idea of ever having worn glasses. Further proof of his dissociation is shown in "But What Did They Do?", when he responds to Jake's accusation that he stole the crown with: "I didn't steal it. I made that item! I made it with the magic I stole!" When others referred to him as "Simon" within earshot, he generally became confused or ignored them.

Around the time of the Mushroom War and before he lost his sanity, he found a young Marceline crying in the rubble. He gave her a stuffed animal from a toy store destroyed in the conflict to comfort her. This toy would eventually become Marceline's most prized possession, Hambo, which she would keep and cherish until her ex-boyfriend, Ash, sold it to Maja, the Sky Witch. Marceline described Hambo to Ash as her "favorite thing in the world." She was seen alone with a worn-out version of the stuffed toy when Finn and Jake visited her memories in A Memory of a Memory, possibly several years after Simon gave it to her. In Sky Witch, she managed to trade it to Maja in exchange for the shirt Marceline gave him. Simon also used the crown to protect Marceline from the dangerous creatures left over from the Mushroom War. At some point, Marceline became ill. Despite this setback, Simon found Marceline's chicken soup and helped her feel better. Later, at least 2 or 3 years after that moment, Simon finally left Marceline after the filming of her last video diary, which Marceline watched him record. Fearing for her safety in what she was becoming, Simon left Marceline before losing his sanity. Before this, using an unknown method, he contacted and summoned Marceline's biological father, the demon Hunson Abadeer to the Land of Ooo from the Nightosphere. He did this in an attempt to get a new caretaker for Marceline in his place, someone he believed would not leave the way she did.

It could be implied that the crown he wore was only meant to protect him. It taught him the secrets of "ice and snow" so he could survive the Mushroom War.
