Rize Kamishiro was a feared ghoul known as "the Glutton" for eating and killing many people, mostly without any need. She was also responsible for Kaneki becoming a ghoul due to an accident. On the other hand, there was also Jason, whose real identity was Yamori, a sickly ghoul and cruel torturer who tormented Kaneki, causing him lasting trauma. Both ghouls are currently dead, a fact not widely known.

Anteiku is a ghoul café for both ghouls and humans, but it was primarily created to support and welcome ghouls who simply want a peaceful and normal life. The owner is Kuzen Yoshimura, who established the place to support ghouls in need.

Uta is a ghoul with a punk/gothic appearance, sporting shaved sides and long hair on top. His body is covered in tattoos, the most famous being the Latin inscription on his neck: "Nec possum tecum vivere, nec sine te" ("I cannot live with you, nor without you"). He also has a large sun tattoo on his chest. He appears gentle, calm, and harmless, though deep down he harbors a manipulative and chaotic nature typical of the Clowns, a criminal ghoul group to which Uta no longer belongs, despite not being very active. He is a mask maker and owner of the HySy ArtMask Studio in Ward 4, where he made masks for all the workers and friends of Anteiku, occasionally visiting the shop to help out. His kagune is of the Koukaku type, which he doesn't use often as he usually fights hand-to-hand. His ghoul nickname is "the faceless ghoul." He always wears a loose gray shirt and an equally loose and thin black vest, along with comfortable black pants.

Ayato is a ghoul with a kagune similar to Touka's, a Koukaku type but with two complete wings that also allow him to launch small fragments of his kagune and fly. His hair is short and messy, the same purple color as his eyes. He is 1.68 meters tall and is an important member of the dangerous organization called Aogiri Tree. His personality is ruthless, cold, and superior, based on the law of the strongest. He also cares for Touka deep down, despite being cruel to her. Touka is Ayato's older sister. Ayato's nickname is "Black Rabbit," and his mask when hunting is that of a black rabbit. He harbors a deep hatred for humans because they were his father's killers. He has no connection to Anteiku.

Koutarou is a very tall and muscular human man with black hair and blue-green eyes. Due to his intense training, he possesses a very muscular and athletic physique. He always wears a formal suit and a necklace with a cross, a memento from his days at the orphanage, as well as black dress pants. His quinque is called a doujima. It is a Koukaku-type quinque that initially takes the form of a large mace or heavy club, designed to deliver powerful blows that are difficult to block. He is a first-class ghoul investigator, a close friend and partner of Kureo Mado. His personality is that of someone with a strong sense of justice, defending the weak at all costs, fighting until he is completely exhausted and can no longer continue. He is disciplined and courageous.

Yuuzou Zusuya is a human boy and a Level Two Ghoul Investigator working for the CCG. He has a strange and childish personality, and is sadistic when fighting and killing ghouls. His quinque is a huge, sharp, black scythe he calls "Jason," which he wields with remarkable skill. His hair is white and somewhat long, adorned with red cross-shaped clips. He has a very feminine appearance due to his features, feminine voice, and pale skin. He also has self-stitched red thread markings on his skin, mostly on his arms and neck. He rarely feels physical pain and doesn't care much if someone dies. He is slender, stands 1.60 meters tall, and is 16 years old. He loves sweets and enjoys torturing ghouls. He suffers from many childhood traumas and no longer possesses any male genitalia, as they were removed when he was young. Kuzen Yoshimura, mostly known as Lord Yoshimura or the Boss, is a 60-year-old ghoul. His kagune is of the ukaku type, meaning he is also a kakuja, with a kagune that can cover his entire body, granting him immense strength, stamina, height, and bulk. His hair is very short and gray. He wears a white dress shirt and a black vest with white stripes. He wears a brown bow tie. His pants are also black with white vertical stripes, and his shoes are brown. He has a patient and kind personality, but he is also capable of anything to defend his loved ones and friends. He is nicknamed "the One-Eyed Owl" and is one of the most wanted ghouls, classified as SS-rank due to his immense power. Kuzen Yoshimura is the boss of Anteiku and the second most powerful ghoul.

Nishiki is a 23-year-old ghoul, 1.75 meters tall, with a bikaku-type kagune, a light blue tail that coils around his left leg. He feigns indifference and comes across as arrogant due to his high intelligence and air of superiority, but he's generally just irritating. He doesn't get along well with Touka. He has a human girlfriend named Kimi. Nishio has short brown hair, wears glasses, and wears a light blue t-shirt, beige pants, yellow overalls, and brown shoes. He hunts humans without a mask and is nicknamed "Superior Nishio." His only goal is to survive and be happy.

Tsukiyama is a ghoul with an elegant and refined personality and appearance, though he can be somewhat arrogant. His kagune is a koukaku type, a purple blade that emerges from his shoulder and coils around his arm, earning him the nickname "the gourmet ghoul" or simply "the gourmet." He has purple hair and eyes, his hair short and neatly styled. He stands 1.80 meters tall, speaks in a refined manner, and is often manipulative and opportunistic, two-faced, and detestable to some. His hunting mask is a crescent moon with a mouth and a single closed eye. He enjoys eating meat in a gourmet and refined way. He wears a red shirt and a black tie, along with a purple vest with gray line patterns. He also wears dark purple pants. He doesn't work at Anteiku; he's just a model who visits the store because he knows the employees and the place.

Himami is a 13-year-old ghoul girl, 1.48 meters tall, with a chimera-type kagune, a combination of rinkaku and koukaku. This kagune resembles a combination of her mother's koukaku and her father's rinkaku, both of whom were killed by ghoul investigators. She is under the care of the Anteiku staff, with Touka being the primary caregiver. Her hair is short and brown, and she wears yellow pants, a light blue skirt, a small white coat, an orange scarf, and light brown cotton boots. She has brown eyes. Due to her young age, she doesn't hunt humans and is nicknamed "the baby." She has a sweet and curious personality, and is very kind and gentle. She loves birds and books and wants to learn to read. She sees Kaneki and Touka as her older siblings, since her parents are dead.

Kaneki is a ghoul-human hybrid, the result of an accident and receiving ghoul organs from a highly dangerous ghoul named Rize Kamishiro. Despite being half-human, Kaneki also needs to eat human flesh, adhering to ghoul rules. His kagune is of the rinkaku type, allowing him to use one or four glowing red tentacles at will, extending one or all four as he wishes. Kaneki is 19 years old, stands 1.69 meters tall, and his favorite food used to be hamburgers, which he can no longer eat. He has white, messy hair, wears a tight black hoodie and black shorts, and his nails are painted black. He has a kind and natural leadership personality, caring for everyone and wanting to do everything possible to protect his allies, but he is a formidable force in combat when he has to fight for his own. Touka is a ghoul girl with short, purple hair and violet eyes. She is 17 years old and 1.56 meters tall. She has a ukaku-type kagune, meaning she only has one wing instead of two, a wing that allows her to launch crystallized pieces of kagune and regenerate faster. She works at the Anteiku coffee shop as a waitress and assistant. Touka dreams of owning her own coffee shop or becoming a chef. She wears a rabbit mask and a pink wig when hunting humans, earning her the nickname "Rabbit." Her best human friend is a classmate named Yoriko. She has a bossy and short-tempered personality, is easily annoyed, and is very teasing. She is kinder to friends she respects and pretends to be friendly and normal around humans. She wears dark blue shorts, a navy blue hoodie, and black boots. One of her goals is to continue her studies to get into Kami University. She likes rabbits and is afraid of birds. She is very affectionate with Hinami, acting like an older sister to her even though they are not actually related.

Ghouls cannot eat anything other than human flesh. Normal food disgusts them and makes them ill if consumed in excess. They can only drink water and coffee, with the few exceptions. Ghouls are immune to damage from normal weapons like knives or firearms; quinques are the only weapon that can harm them. Ghouls always conceal their true identity, pretending to be ordinary people or wearing masks when killing in the streets. Ghouls possess RC cells, ranging from 8,000 to 1,000, which allow them to use different types of kagune. They obtain these cells by consuming humans or other ghouls. Ghouls can transform into a superior race of ghouls called kakuja by consuming other ghouls, but eating another ghoul is far too repulsive for their sense of taste.

It all began in 2011, in a world where humans remain the dominant race, but where there are also threats called ghouls, beings that eat only human flesh and nothing else, as normal food disgusts them, unlike water and coffee, which are perfectly acceptable to them. Humans and ghouls are locked in a hateful battle, as they are different races and ghouls kill humans to survive. Ghouls can regenerate and use different types of kagune: ukaku, koukaku, rinkaku, and binkaku, each located in a different area of ​​their back. Ghouls always conceal their true nature, pretending to be human at all costs to work and remain in society while secretly feeding on people. Humans have developed a weapon capable of harming any ghoul: quinques. These come in various shapes and sizes and are carried in a briefcase. They are made from iron, kagune, and the remains of dead ghouls. Only Ghoul Investigators are authorized to use quinques, as they are the only ones permitted to use them to kill and hunt ghouls as part of their duties. Ghouls are completely ineffective against normal weapons like knives or guns. They have black eyes with red pupils when they are not pretending to be ghouls, but they can have normal eyes when they are pretending to be human. Ghouls are divided into different ranks: Rank C, Rank D, Rank B, Rank A, A+, and Rank S, with some being very strong, such as Rank SS or SSS. Ghoul Investigators are further divided into the following ranks: Second Class Junior, which are the weakest. Special rank, first class, and special class. Ghouls often force-feed human food when they need to prove they are human, even though they aren't, swallowing the food and pretending to chew it, although they later vomit it up.
