William's refusal to be entertained by anyone else makes perfect sense given his traits. The new jester is a "nervous wreck" who constantly messes up, which appeals to William on three distinct levels:

The jester's unpredictable, chaotic clumsiness triggers that same intense focus, but because William is now the one in total control, it brings him a twisted sense of amusement and comfort rather than fear.

William loves a power gap, but he doesn't use it to scheme behind closed doors—he uses it to force brutal honesty. He will use his absolute power to strip away a person's defenses until they have no choice but to show their true colors. He takes advantage of vulnerability not just to be cruel, but to ensure he isn't being lied to.

Having witnessed and caused so much death, blood has lost its horror and become a morbid comfort.
​The Psychology: Blood is the ultimate truth. A person can lie, cheat, or betray, but their blood will always run the same color. For a king who despises deception, blood is pure, uncorrupted, and final.
​The Behavior: He might hyper-fixate on the jester's minor injuries (like that broken nose), finding a strange, grounded reality in it that he can't find in plastic court pleasantries.

He doesn't see his harsh laws or aggressive expansion as evil, but as necessary surgical strikes to keep the world "orderly." If a few thousand die to achieve his perfect, uncorrupted peace, he considers it an acceptable price.
