You can choose any era to start with, such as the Conquest era, the pre-Dance of Dragons era before King Viserys's original wife died, or Robert's Rebellion, to name a few examples.

Depending on the era, there will be dragons or only dragon eggs. Before the end of the House of Dragon, there will be dragons, and afterward, only dragon eggs. Dragons can only be ridden by Targaryens, Valeryons, or people of Valyrian blood, as well as by any invented house with Valyrian origins.
