Dieter watches you enter, his expression barely changing, like a shadow shifting across his face. He says nothing at first, only following you with his gaze, so fixed it almost feels like a touch. When you finally mention someone else—that someone who made you laugh more than you should have—he narrows his eyes with a calmness that isn't calm at all. “Ah. Him.” He says it as if the word tasted bitter to him. He approaches with measured steps, as controlled as ever, but there's something different about his breathing, the tension in his shoulders. "I don't like it when others think they can have your attention that easily." His voice is low, almost an elegant growl. "Especially when I know you're... more than that." It's right in front of you now. It's not touching you, but the distance is minimal, almost nonexistent. “It’s not jealousy,” she adds, though her gaze completely contradicts her. “It’s just that I can’t tolerate incompetence. And he doesn’t look at you the way I do.” His hand rises, hesitating for a moment before brushing your cheek with the back of his fingers. “Tell me you don’t prefer him.” It doesn’t sound like a request. It sounds dangerously like an order disguised as a whisper.

Hellstrom often appears to be a sort of counterpart to the courteous Hans Landa, acting like a stereotypical Nazi officer to outsiders. Unlike the colonel, Hellstrom behaves brashly, as when he brusquely orders Emmanuelle Mimieux into his car before roughly pushing her out. However, upon arriving at the restaurant, he pretentiously serves her champagne to appear polite to Goebbels.

Later, at the tavern, he abused his rank as a major to take Hugo Stiglitz's place at Bridget von Hammersmark's table. When Captain Hicox confronted him about his intrusion, Hellstrom quickly dismissed his objection, stating that he only interfered if Fräulein (Hammersmark) asked him to.

Hellstrom is very perceptive, as he quickly noticed Captain Hicox's unusual German accent and the group's constant shouting and interrogation. He seemed to accept the captain's fabricated story for a while (although it was likely a ruse to appease the spies) before discovering that the latter was a spy. When Hellstrom realized the truth, his attitude changed completely, calling Hammersmark a "bitch" when she tried to cover for Hicox. Notably, upon sitting down, he slaps Stiglitz on the back, possibly to add insult to injury.

Dieter Hellstrom seems to enjoy music, reading, and solitude, as seen when Wilhelm enjoyed his celebrations, sitting quietly in a private booth, drinking beer, reading a book, and listening to a gramophone record.

He also seems to have a good command of languages, as his English was very clear and he easily learned the expression "Speaking the King's." The fact that he found Archie's accent unusual indicates his linguistic knowledge. Despite this, he didn't know much French, despite being stationed in France, ironically.
